Elizabeth's Fabulous Vegan Supper

Introduction

Number of Servings: 4

Ingredients

    1 medium onion
    2 tbsp olive oil
    1 can diced tomatoes
    1 can black beans (undrained)
    1 can garbanzo beans (drained)
    1-2 small zucchini, diced
    approx. 1-2 tbsp basil (to taste)
    approx 1-2 tsp marjoram (to taste)
    approx 1-2 tsp coriander (to taste)

Directions

Dice onion and zucchini and sautee in olive oil for approximately 5 minutes. Add the tomatoes, black beans and garbanzo beans, and stir well. Add in the basil, marjoram and coriander, and cook for approximately 5 minutes-- taste for seasoning. Cook for 20 minutes more, or until texture is desireable. Other beans/vegetables/seasonings can be substituted--I like to use garam masala and cumin sometimes to make it more "indian".
