Number of Servings: 24

Ingredients

    2/3 cup sugar
    1 1/2 cups whole wheat flour
    1 1/2 tsp. baking soda
    1/2 tsp. salt
    1 1/2 tsp. cinnamon
    2 T. oil
    1 1/2 cups mashed bananas
    1 cup buttermilk
    2 eggs
    4 cups raisin bran
    3/4 cup miniature semisweet chocolate chips

Directions

Preheat oven to 350 and spray 24 muffin cups with non-stick spray. In a large bowl combine all the dry ingredients. In another bowl, combine all wet ingredients. Gently mix wet ingredients into dry and stir just enough to mix. Stir in raisin bran and chocolate chips. Stir very gently just to combine. Divide batter between 24 muffin cups. Bake at 350 for 23-25 minutes or until done. Makes 24 servings.
