Ingredients

1/2 head red cabbage, shredded
1 head Napa cabbage, shredded
1/2 sliced (or chopped) red onion
1 small can sliced water chestnuts
2/3 cup shredded carrot
1/2 bottle low-fat Asian flavored salad dressing
1 pound, cooked, sliced chicken breast
5 tbsp no salt, dry roasted peanuts, seperated
chow mein noodles
Directions
Combine the first seven ingredients in a large bowl. Toss to coat with dressing. Top each serving with about 3 oz. of sliced cooked chicken, 1 tbsp peanuts, and 1 tbsp of chow mein noodles for crunch (you can omit the last two ingredients for less fat and calories). This slaw is better after it has marinated/chilled for a bit. Generally serves 5, but it depends on the size of the cabbages.
