Virginia's Chocolate Chip Peanut Butter Pie

Ingredients

    * *natural peanut butter, 8 tbsp
    * Cream Cheese, Fat Free, 8 oz
    * Sweetened Condensed Milk, Fat Free (Borden Eagle Brand), 1 1/2 cups
    * *Lemon Juice, 1 1/8 cup
    * *Cool Whip Free, 1 cup
    * chocolate chips, semisweet, 1/3 cup

    Crust
    10 sheets low fat graham crackers
    1 cup ground fiber one cereal
    2 1/2 Tbsp light butter
    2 Tbsp Fat Free Cream Cheese
    20-40 sprays I Can't Believe It's Not Butter Spray

Directions

* In a large bowl, using an electric mixer, beat together peanut butter and both types of cream cheese until smooth. Gradually beat in milk and lemon juice; fold in whipped topping and 4 tablespoons of mini chocolate chips.

* Spoon peanut butter mixture into prepared pie crust; sprinkle remaining 1 tablespoon of chocolate chips over top. Cover with plastic wrap and freeze until firm, at least 4 hours. Slice into 11 pieces and serve.

For pie crust, crush crackers and Fiber One and mix with melted butter and cream cheese, adding spray as needed. Press into ungreased pie sheet and cook at 375 for about 8 minutes.
