Combine milk and lemon juice and set aside. In a bowl, combine applesauce and eggs. Sift together the remaining ingredients and add to the oil mixture. Pour in milk mixture. Stir just until flour is assimilated. Heat a skillet or griddle over moderate heat. Spray with Pam spray very lightly. Drop batter onto skillet or griddle by 1/4 cupfuls. Cook, checking frequently, until topside of cake is full of bubbles and underside is nicely browned. Turn cake over and brown the other side.
