Introduction

I used three 7 oz. frozen salmon filets and poached them with some lemon juice. It yielded about 16 oz cooked. To make it easier, use canned salmon. You could probably further reduced the fat and calories by using wild salmon rather than farm raised...but for the sake of my pocket book, I went with farm raised! =) I used three 7 oz. frozen salmon filets and poached them with some lemon juice. Ingredients

    1 6oz package Stove Top Chicken Stuffing Mix
    3/4 cup water
    1 tsp knorr chicken boulillon
    1/3 cup fat free Miracle Whip
    16 oz. salmon, cooked
    1 tablespoon lemon juice
    1 cup Kraft fat free mozzarella cheese
    1/2 cup minced red pepper
    3 tablespoons mined onion
    1/2 cup egg whites

Directions

Combine all ingrediants in a large bowl and work together thoroughly.
Using a 1/3-cup measuring device, divide mixture into 13 parts and shape into patties.
Refridgerate for 1 hour.
Heat a large non stick skillet on medium heat and spray with Pam.
Cook for 3 minutes on each side, flipping carefully. Cook for a total of 6 minutes, or until golden brown.
Serve on in a lettuce "bun" with a lemon wedge and tartar sauce. (For my tartar sauce I combine equal parts fat free miracle whip with fat free sour cream, add a little dijon mustard for color, relish, lemon juice and onion powder, all amounts are to taste...)
