3 c cooked cousous
1/5 c bell pepper (red, yellow, or orange)
1/5c cucumbers (chopped)
2 c fresh chopped spinach
1 avocado (chopped)
1/2 c shredded carrots
sautÃ©ed shrimp or chicken if desired
the juice of 1 lemon
3tbs oilive oil ( add more if needed)
1/2 tsp salt
1/4 tsp pepper
2 tbs fresh parsley ( 1 tbs dry parsley)
- in a bowl combine all of your chopped vegtables and set aside
- when the couscous has cooled off fluff the couscous with the back of a fork to prevent it from clumping together, then add to vegtables
- in a small a bowl whisk together the lemon juice, olive oil, salt, pepper and parsley.
-drissel dressing over couscous and vegtables garnesh with lemon zest, and parsley.
- add some shrimp or chicken for some added flavor
