Great as a side dish with chicken Great as a side dish with chicken
Number of Servings: 4

Ingredients

    1 summer squash sliced 1/2 inch thick
    1/2 cup fresh mushrooms cut in half
    1 sweet red pepper cut into bite sized piece
    2 small onions chopped
    1/2 ripe tomato cut in wedges
    2 TBS Fat free Italian dressing
    2 TBS grated Parmesan cheese
    1/4 small can French fried onion rings topping

Directions

makes 4 servings
Preheat oven to 400
slice veggies (except tomato) into bite size pieces and gently toss in the 2 tbs fat free Italian dressing. place in oven proof casserole, top with tomato slices and parmessan. Bake for 15 mins covered, then uncover add a few french onions rings and bake 10 more minutes uncovered.
