my favorite quick and easy breakfast or just anytime meal....i will sometimes serve with a nice piece of toast or some bacon or ham on the side....or add potatoes or something to make it a little more hearty.... my favorite quick and easy breakfast or just anytime meal....i will sometimes serve with a nice piece of toast or some bacon or ham on the side....or add potatoes or something to make it a little more hearty....

Ingredients

    1/2 medium Zucchini, baby sliced
    Egg, fresh, 3 large
    Green Peppers (bell peppers), .25 cup, chopped
    Onions, raw, .25 cup, chopped
    Garlic, 1 clove
    Pepper, black, 1 tbsp
    Goya Adobo Seasoning, 0.25 tsp
    Sofrito Sauce, 1 tbsp
    1 pat of butter

Directions

chop all items. add butter to hot pan then add in zucchini, bell pepper, onion and garlic, saute til slightly softened. beat eggs, add seasonings to eggs, dump into pan....either form into an omelet or scramble...cook to desired consistensy...enjoy!
