This makes a lot depending on how you cut up the tofu. They are best when they've cooled a little and are even good chilled and added to salads.

This makes a lot depending on how you cut up the tofu. They are best when they've cooled a little and are even good chilled and added to salads.

Number of Servings: 80

Ingredients

    For step 1.

    1/2 cup nutritional yeast
    1 tbsp fresh chopped thyme
    1 tsp regular Spike seasoning
    1 tsp no salt Spike
    2 blocks extra firm tofu
    1/4 cup olive oil
    1 tbsp tamari sauce

Directions

Makes 40 1" tofu nuggets

Step 1 - prepare the dry mixture to roll the tofu in - mix the first 4 ingredients together.

Step 2 - Prepare the tofu

Cut up 2 blocks of extra firm tofu into 1" cubes.

Put the cubes into a large bowl.

Pour 1/4 cup olive oil and 1 tbsp tamari over the tofu cubes and mix until the cubes are well-coated (most of the oil and tamari drain off so it doesn't add much in calories or sodium).

Step 3.

Roll the cubes in the dry mixture prepared in Step 1.

Step 4.

Bake in a 400 degree oven on a parchment lined baking sheet that has been oiled or placed directly on a well-oiled baking tray.

Bake them for 30 - 40 minutes until they start to firm up and turn brown (if you like them browner cook them a little longer) - turn them once during the baking process.
