Sprouted Buckwheat Breakfast Fruit Salad

Introduction

You can modify this salad based on what fruit is available. I can normally find good apples and bananas year-round. I change the rest based on what is fresh. Ingredients

    1/4 C Hulled Buckwheat (see sprouting instructions)
    1 Small Apples, cored and cubes
    1 Small Banana, sliced
    1/4 C Blueberries
    1/2 C Grapes (red or green seedless)
    1/4 C Soy Milk (or Orange Juice if preferred)
    1 1/2 Teaspoons Flax Meal

Directions

Wash and core apple and cut into pieces. Slice banana. Rinse blueberries and grapes and place in bowl. Sprinkle 1/4 cup of soaked/sprouted buckwheat on top of fruit. Sprinkle the flax meal on top. Pour 1/4 cup of Soy Milk or Orange Juice on top.

To Sprout Buckwheat:
Rinse Hulled Buckwheat and soak for 6 hours or so. Rinse it several times before using 1/4 cup on each salad. You can sprout the rest for a day on your kitchen counter. Keep rinsing it to make sure it does not dry out. After you see the "tails" on the sprouts you can rinse them then store them in the refrigerator for a few days.

Grind your own Flax Seed into Flax Meal in a clean coffee grinder (it's cheaper this way!). Do small portions at a time and store in the refrigerator.
