Introduction

These are yummy gluten free fluffy banana waffles! We don't have them often as they are high in calories. These are yummy gluten free fluffy banana waffles! We don't have them often as they are high in calories.
Number of Servings: 4

Ingredients

    1/2 cup Quinoa Flakes
    1/2 cup Quinoa Flour
    1/2 cup Oatmeal
    2 Tbsp Honey
    2 tsp Baking Powder
    1 tsp Baking Soda
    1/2 tsp salt
    2 very ripe Bananas
    2 Eggs (or 1/2 cup egg beaters or egg replacer)
    3 Tbsp Olive Oil
    1/2 c Soy Milk

Directions

Mix flour, flakes and oatmeal with dry ingredients. In separate bowl mash bananas and mix in flax meal or egg replacer and honey, add to dry ingredients. Mix in oil. Add milk and water until desired consistency for waffles. Cook in waffle iron or as pancakes on the stove. Top with fresh or frozen thawed fruit.

Makes eight fluffy squares. (My waffle iron makes two squares at a time.) Makes six or eight pancakes.
