Mediterranean Tuna Salad

Number of Servings: 3

Ingredients

    *Tuna, Albacore, in water (Starkist pouch), 3 oz
    Hellmann's , Light Mayonnaise, 1.5 Tbsp
    *Extra Virgin Olive Oil, 1 tbsp
    *Peppers, sweet, red, fresh, .25 cup, chopped
    Onions, raw, 2 tbsp chopped
    Capers, canned, 1 tbsp, drained
    *Spanish Olives w/pimento - 4 Olives
    Black kalamata Olives, 3 jumbo pitted
    Sun Dried Tomatoes, .25 cup
    Oregano, ground, 1 tsp
    Pepper, black, freshly ground .5 tsp
    *Pinch crushed red pepper flakes

Directions

Makes three 1/3 cup servings. Place olive oil in bowl and add chopped sun dried tomatoes and let them soak while you chop other veggies. Mix all ingredients together and refrigerate at least 1 hours for flavors to develop. Serve on whole wheat pita or mixed salad greens.
