Mock Key Lime Pie (Fiber one crust)

Ingredients

    2 c Fiber One Cereal
    4 Tbsp. I can't believe it's not butter fat free margarine
    1 small container Cool Whip Free (8oz)
    Fresh squeezed Key Lime Juice (to taste) - 1/2 cup in nutrition info
    Weight Watchers Key Lime Pie Nonfat Yogurt, 6 oz
    Splenda (to taste) - 1/2 cup in nutrition info here

Directions

Begin by preheating oven to 350 degrees. In a blender or food processor, grind Fiber One to a breadcrumb-like consistency. Combine crumbs with melted butter and stir until well mixed. In an oven-safe pie dish sprayed with nonstick spray, evenly distribute Fiber One mixture, using your hands or a flat utensil to press & form the crust. Use your fingers to press it into the edges and up along the sides of the dish. Bake pie crust for 10 minutes. Set aside.
Mix defrosted cool whip, key lime juice, and splenda until you have the tartness and sweetness you like. Pour into crust. Refrigerate for 1-2 hours. Enjoy!
Serves 8.

1 slice = ZERO weight watchers points prepared the way I listed, for 8 slices

Adding one 6oz container of WW Key Lime FF yogurt makes 8 slices each worth 1 point, but 10 slices each worth 0 points and adds a creamy texture and some flavor.


NOTE: If you use real butter instead of light, it adds about 20 calories per slice.
