Warm Spinach and McIntosh Apple Salad with Bacon

Introduction

I found this on the Food Network and it has become a family staple. You may have to add a bit more dressing, Newman's Light Balsamic Vinegarette works. Number of Servings: 4

Ingredients

    4 thick bacon slices
    1 small red onion
    2 Tbs. cider vinegar
    2 tsp. Dijon mustard
    1tsp sugar
    1 (10 oz) bag of spinach, washed, dried, and
    torn into bite-size pieces
    1 McIntosh apple, cored and sliced thinly

Directions

In a skillet set over moderate heat cook the bacon until it is crisp. Transfer the bacon to a plate lined with paper towel and let it drain. When cool crumble the bacon. Pour off all but 2 Tbs. of the fat from the skillet.

Add the onion to the skillet and cook it stirring occassional, for 3 minutes, or until it is wilted. Add the vinegar, mustard, sugar and bring the mixture to a boil, stirring. In a serving bowl combine the spinach, bacon and apple. Add the hot dressing and toss to combine and serve.

  • I really liked this salad. It was very flavorful. I think there was a mistake tho. They never said when to add back in the bacon, but the fat content reflected that you do add it back in. I used double of reg. bacon instead of the thick. I'm sure it would be great either way. Try it! - 1/14/08
