i medium head of cauliflower , broken into pieces
2 tbs becel light (light margarine)
3 tbs flour
2 cups 1% milk
1 tsp salt
1/2 tsp pepper
1/4 tsp ground nutmeg
1 cup low-fat cheddar cheese , shredded
In sauce pot, make light golden roux with butter and flour. Add milk and salt, pepper, & nutmeg. Whisk and cook on med to med-hi until thickened. Take off heat and whisk in 3/4 cup cheese.
Cover bottom of casserole dish with small amount of sauce. Add cauliflower cover with remaining sauce. Sprinkle remaining cheese over top.
Bake at 350, 20-25 minutes, uncovered.
