Cheesie Spinach Casserole

Introduction

Spinach has so many nutrients in it, including vitamin A, C and Iron, but many people dislike the taste.

Even people who hate spinach will be asking for seconds of this easy to prepare dish.
Spinach has so many nutrients in it, including vitamin A, C and Iron, but many people dislike the taste.

Even people who hate spinach will be asking for seconds of this easy to prepare dish.

Number of Servings: 8

Ingredients

    3 cups Frozen Spinach
    1cup Seasoned Bread Crumbs
    1 cup chopped Sweet Red Peppers
    1.5 cup chopped Onions
    1 cup chopped Green Bell Peppers
    1 cup diced Cheddar Cheese

Directions

Preheat oven to 275 degrees

Boil frozen spinach in saucepan as directed by package or until tender (approx. 4 minutes) Then drain

Chop red peppers, green peppers, onion and cheese

Mix all ingredients in a medium sized casserole dish, saving some cheese to sprinkle on top after mixing

Place casserole dish in oven and cook until cheese has melted (approx. 10 minutes)

Makes 8 1-cup servings.

Variation: Dish can also include precooked chicken breast for non-vegetarians
