B's Tomato Zucchini Salad

Introduction

Summer favorite, perfect for South Beach Phase 1 Summer favorite, perfect for South Beach Phase 1
Number of Servings: 8

Ingredients

    3 cups shredded zucchini
    1 cup chopped tomato
    1/4 cup chopped onion
    1/4 cup olive oil
    1/4 red wine vinegar
    2 Tbls. parsley
    salt and black pepper to taste

Directions

Combine all ingredients in a bowl, let set in fridge at least one hour or longer before serving. Makes 8-1/2 cup servings.
