Carob Cupcakes - 1 WW Point

Ingredients

1/2 c Flour light rye or oat (nutrition here is with rye flour, lite)
1/2 cup oat flour (I simply grind oatmeal to make my own)
2/3 cup Fiber One, ground into a flour
1/2 c Carob powder
1/2 ts Baking powder
1 tsp baking soda
1/2 tsp salt
1 1/2 tsp stevia
or 1/2 cup applesauce unsweetened
4 egg whites
1/2 cup water
1/2 cup carob chips (unsweetened) (optional)
Directions
Preheat oven to 400 degrees. Thoroughly mix first six ingredients in separate bowl. Mix remaining ingredients. Add dry ingredients to moist and mix well. Pour into greased and floured cupcake tins. Bake 15 to 20 minutes until toothpick inserted comes out clean.
1 WW point per cupcake with carob chips (leaving out carob chips does save about 20 calories and a gram of fat, making these 0 points for one)
Making this recipe with light spelt or rye flour has good results. The cupcakes will be a little heavier, but still delicious.
If you are using white powdered stevia extract you may need to cut back on the amount to avoid having cupcakes that are too sweet. With white powdered stevia, 1 teaspoon equals approximately 1 cup of granulated sugar, so let that guide you in your baking.
