Celeste's Vegan Apple Crisp
Submitted by: CALA2008
Introduction
I made this vegan apple crisp and have dedicated it to all my SparkFriends and especially Cat (as this is her favorite dessert). Helping me along the way is Jeremy and Todd who are supporting me on my journey to becoming a full time vegan. I could have made more as Michele is loving it. Thanks sweety. Thank you everyone. Ingredients
-
2 c. whole wheat flour
2 c. rolled oats
2 c. brown sugar
3 tsp. cinnamon
Whole or sliced almonds for garnish and extra protein.
1 c. 100% vegan buttery spread
6 c. your favorite apples (washed, peeled and sliced)
1 tbsp. vanilla
Directions
Preheat oven to 350 degrees.
Mix all the dry ingredients together. Cut in the vegan butter spread. Then set aside while you prepare the apples.
Combine the apples, vanilla and 1/3 of the dry mixture. Spread on the bottom of a 10" x 15" baking dish (I used glass). Then cover with the remaining crumbs and press down gently. You may use a small baking dish, and cut the recipe in half.
Bake in the preheated 350 degree oven for 35 - 40 minutes, until the apples are tender. Add the almonds for garnish (whole or sliced).

This was so good but I wanted more and more and I didn't have more and more because I don't want to gain more and more weight. - 6/24/08

I'm so glad that you liked it...perhaps in the future, we can freeze some once we cut in into portions, and then thaw it, and bake in the toaster oven or oven, as an occasional treat. Hugs, C

I had heard ravings about this and didn't think it would be as good as the ravings stated and it wasn't - it was better! - 6/24/08

That makes me feel so good. I'm glad that it more than lived up to your expectations. As you can see I suggested to Jeremy that we freeze some, so that we can have the occasional treat. Hugs, C
