Artichoke-Bacon Chicken Salad Sandwiches

Ingredients

1/3 cup plain low fat yogurt
1/4 cup light mayonnaise
3/4 tsp chopped fresh rosemary
1/4 tsp black pepper
1 garlic clove, minced
2 cups shredded boneless skinless rotisserie chicken breast
1 cup drained canned artichoke hearts, chopped (NOT the ones marinated in oil)
4 bacon slices, cooked until very crisp and crumbled
2 cups trimmed arugula (baby spinach works well too if you don't care for arugula)
8 (1.5oz) slices sourdough bread, toasted
Directions
Makes 4 sandwiches
Combine first 5 ingredients in a large bowl, stir in chicken, artichoke hearts, and bacon. Divide arugula (or spinach) evenly over 4 toast slices, top each with 3/4 cup chicken mixture and the other toast slices.
You can make the chicken salad a day ahead if desired. I also often use whole grain toast to increase the fiber content.
