Clean Parchment-Baked Chicken

Ingredients

    2 (12"x18") Parchment Sheets
    1 cup arugula leaves, torn
    2 (4oz) skinless, boneless chicken breast
    1 tsp fresh sage
    1 tsp fress rosemary
    Dash salt and pepper
    2 tsp olive oil

    2tsp kalamata olives, sliced and pitted (optional) (not included in nutritional info)

Directions

1. Preheat oven to 450 degrees.
2. Lightly coat each sheet of parchment paper with cooking spray, leaving a 2-inch border.
3. Place 1/2 cup arugula on one side of the parchment so it touches the fold but not the ungreased border.
4. Place chicken over arugula; sprinkle with 1/2 tsp sage and 1/2 tsp rosemary. Top with 1/4 cup chopped plum tomato.
5. Top with a dash of salt and pepper and drizzle 1 tsp olive oil
6. (Optional) - Top with 1 tsp sliced olives if desired.
7. Fold paper; seal edges with narrow folds.
8. Repeat with the remaining parchment paper, chicken, and other ingredients.
9. Place packets on baking sheet. Bake for 20-30 minutes or until puffy and lightly browned.
10. To serve, open packets and transfer arugula and chicken to plates. Drizzle juices over top. Or serve right in the packet.
