Introduction

The original is from her Lady & Son's cookbook. I changed up a few items to lighten it up and it's a big hit! By omitting all the butter and replacing the pork sausage with turkey, you are saving loads of calories and fat! Enjoy! The original is from her Lady & Son's cookbook. Ingredients

    1 lb turkey sausage (not breakfast)
    1 med. diced yellow onion
    1 6 oz box Uncle Ben's Long Grain & Wild Rice
    1 can Campbells Healthy Choice Low Sodium Cream of Mushroom soup
    1 4oz can of mushrooms
    5 Sprays of I Can't Believe It's Not Butter Spray

Directions

Preheat oven to 350. Prepare the rice as directed on box, omitting the added fat. Meanwhile brown the turkey sausage in a skillet and drain. Add in the diced onions and let them steam for a couple of minutes. Mix together everything remaining except the butter spray and pour into an 8x8 baking dish. Spray top of casserole with the butter spray and bake uncovered for 20-25 minutes.
