Chopped Salad with Feta and Olives

Introduction

Ingredients

    2 T red wine vinegar
    1 to 2 tsp oregano
    1 to 3 cloves garlic, crushed through a press
    3 large ripe tomatoes, seeded and diced
    1 medium green bell pepper diced
    1 long cucumber, seeded and diced
    2 scallions (green onions) coarsely chopped
    1/2 c crumbled feta cheese
    1/2 c chopped pitted kalamata olives
    1/2 tsp salt
    pepper to taste (optional)

Directions

Makes 6 servings

1. In a large bowl, mix diced vegetables, cheese, olives and garlic. (Use your hands to toss.)

2. Sprinkle on salt and oregano, sprinkle in vinegar, mix well using your hands.

3. Chill for an hour before serving... or serve right away.
