Lemon Poppy Seed Bread for the Machine

Introduction

Number of Servings: 12

Ingredients

    2 Tablespoons lemon juice
    2 Tablespoons canola oil
    1 teaspoon vanilla extract
    2 large eggs
    2/3 cup unsweetened applesauce
    1 cup granulated sugar
    1/2 teaspoon salt
    1 teaspoon baking soda
    1 Tablespoon grated lemon peel
    1/4 cup poppy seeds
    2 cups unbleached all-purpose flour

Directions

Run on Quick or Cake cycle. Tends to be very sticky and will probably require some attention while mixing to make sure all the dry ingredients are incorporated. After cycle, remove pan from machine and allow bread to cool in pan for about 10 minutes before removing. Cool completely before slicing.

Yields 12 servings.
