Chicken Tex Mex

Introduction

This is a delicious and fast dinner meal. Instead of Cumin seeds, use ground Cumin. To reduce calories and fat you could use light cheddar cheese and brown rice. This is a delicious and fast dinner meal. Instead of Cumin seeds, use ground Cumin. To reduce calories and fat you could use light cheddar cheese and brown rice.
Number of Servings: 4

Ingredients

    1lb cut up chicken breast, 1 cup white rice, 1 cup shredded cheddar cheese, 1 cup diced tomatoes, 1 cup diced onions, 1 cup diced bell peppers, 1 cup chicken broth, 1 tsp oil, 1 tsp ground cumin, 3 cloves of garlic

Directions

Cut chicken into cubes and cook. Saute onions, cumin, garlic and oil in pan. Once that is done, add 1 cup of white rice to pan and coat the rice well with saute. Then add 1 cup of cut up peppers to mixture, and coat well. Add 1 cup chicken broth to rice, cover and let it come to a boil. Once it has boiled let it simmer for 20 minutes (just keep checking to see if its done because I use instant rice and it doesnt take as long as other rice) Once rice is done, add chicken, 1 cup of cheddar cheese graded, and 1 cup of diced tomatoe's to rice mixture. Cover and let sit for 5 minutes and then serve! Four Servings!

  • Good, but a little low on spices....I'd up the cumin maybe add a few other Indian spices. Also, I used long grain rice and needed 2 cups chicken broth and cook for 20 min. - 7/1/08
