chicken fettucine alfredo

Number of Servings: 4

Ingredients

    1 cup reduced fat cottage cheese
    2 Tbs. chicken broth
    1/2 parmesean (or romano) cheese
    1 clove garlic
    1 pkg. whole wheat pasta (linguine, fettucini,...)
    2 chicken breasts (cooked)
    salt and pepper to taste
    broccoli (I like to use fresh, steamed, but you can use frozen 10 oz.)

Directions

I used linguine instead of fettucine -
Cook pasta according to directions (reserve 1/2 cup of pasta water). Steam broccoli. Cut chicken into strips and brown in saute pan. Puree cottage cheese and broth until no curds. Stir in parmesean cheese. Mince garlic and add to mixture. If sauce is too thick use pasta reserve water to thin. Mix sauce, pasta and broccoli together. Place chicken strips on top.
