2 Med. Eggs
1 sl. Virginia Style Ham
1 1/2 in. slice, Red Onion, cut into slivers
1 sl. Swiss Cheese
1 tsp. Dijon Mustard
1 tsp. Olive Oil
Meanwhile, crack eggs into bowl, careful not to get shells into mixture. Whisk ,add cream & mustard, whisk again.
Chop Ham into small bits & add to hot pan. Slice Onion into thin slivers, add to ham. Cook till onion is tender. Add egg mixture & seasoning, sprinkled over entire mixture.
When egg mixture starts to 'frim' add Cheese to one side of pan & egg mixutre. Flip over to fold into Omellette & let sit for few min. with burner turned OFF! Till 'frim'. Carefully, move to plate & serve.
