Mushroom Brown Rice

Introduction

Ingredients

    1 Tbsp light margarine (recipe calculated with Smart Balance Light)
    4 large white mushrooms, chopped
    1 scallion (green onion), chopped
    1/2 cup cooked brown rice
    dash salt
    dash black pepper

Directions

Melt the margarine in a sauce pan, then add mushrooms and scallions. Add salt and pepper. Cook until mushrooms are soft and reduced in size. Add rice and mix well. Heat through. Enjoy!
