IntroductionCreamy sauce to serve over pasta. Add chicken for a hearty meal. Creamy sauce to serve over pasta. Add chicken for a hearty meal.
2 oz chevre (goat cheese)
1 cup lightly packed basil leaves
4 cloves of garlic
1/2 oz parmesan cheese, grated
1/2 oz romano cheese, grated
2 tbsp olive oil
1 box Barilla thin spaghetti or penne
*reserved pasta water
2. In a blender or food processor, combine chevre, basil leaves, reserved, peeled garlic cloves, cheeses and olive oil. Process at medium speed, scraping down sides as necessary, until well blended. Add pasta water to make a smooth consistency for mixing with pasta.
3. Toss pesto sauce with pasta, adding more pasta water as needed to coat pasta well.
Top with cooked chicken if desired.
