Introduction

Cheap thrills from rhubarb, which grows almost anywhere. You can make rhubarb leather from this recipe if you have a dehydrator. Use only the stems, not the leaves. Number of Servings: 12

Ingredients

    4 C rhubarb stems, chopped
    2 medium or 2 small bananas
    12 dates
    About 0.5 - 1 C water, or as needed

Directions

Unless you are using a soft date like barhi, a couple of hours ahead of time, soak the dates until soft. Blend bananas and gradually add rhubarb, adding the date soak water and any additional water needed. Then add the dates one at a time. Rhubarb can be hard on blenders, so if you have a juicer with a homogenizing function, you might put it through the juicer first. Makes about 12 half-cup servings or one large sheet of fruit leather in the dehydrator.
