Grilled Squash Medley

Introduction

Roasted summer vegetables with a touch of olive oil & lemon. Takes time to prepare, but so worth it. Roasted summer vegetables with a touch of olive oil & lemon. Takes time to prepare, but so worth it.
Number of Servings: 6

Ingredients

    Zucchini, 2 cups,
    Summer squash, 2 cups
    Red Peppers, sweet, 1 large
    Onions, raw, 1/2 large
    1 cup cherry or grape tomatoes
    Juice from 1/2 Lemon
    Olive Oil, 1 tbsp
    Basil, 10 leaves, julienned

Directions

Cut first 4 ingredients into 1 " pieces for grilling in a basket or broiling in your stove *. When veggies start to roast, add tomatoes & grill until they pop. Put everything in a large bowl, add basil, squeeze lemon juice over all, & sprinkle olive oil. Still until flavors blend. Serves 6 roughly 1cup each.

*Veggies may be grilled in larger pieces & cut up
