Introduction

This mixture is really versatile! You can eat it as is, add it to taco or burritos as well as it it will baked tortilla chips! Very healthy for you too! This mixture is really versatile! You can eat it as is, add it to taco or burritos as well as it it will baked tortilla chips! Very healthy for you too!
Number of Servings: 16

Ingredients

    2 Cans Pinto beans (rinsed and drained)
    1 Can black beans (rinsed and drained)
    2 C Corn (frozen or canned) - I used 1 can
    2 Jalapeno peppers - diced
    1/2 red or orange pepper - diced
    1 small onion-diced
    1 can petite diced tomatoes (drained)
    2 cloves garlic - diced
    1 tsp salt
    1 tsp black pepper
    3/4-1 C light italian dressing


Directions

Mix all ingredients together and refrigerate for at least 2 hours if not overnight. The longer it sits the more the flavors mix together. Please drain all items well so it doesn't end up being too sloppy! 16 - 1/2 C servings approx.
