Ingredients

1 bag Steamfresh Frozen Brown Rice (or 2 cups other cooked brown rice)
1 bag Steamfresh Frozen Yellow Corn (or 2 cups other frozen corn)
1 16oz Jar of Salsa
1 cup dried black beans, soaked overnight and rinsed
1 pound extra lean (96/4) ground beef, browned and drained
2.5 cups water
1 small onion chopped
1 tsp chili powder
1 tsp onion powder
2 tbsp taco seasoning
Optional: 2 cups Kraft Mexican style cheese (1 bag) Not in nutritional info
Note: you may also use a beef broth/water combo instead of just water, but be sure to figure that in, because it will increase the sodium.
Directions
Sprinkle ground beef with some of the onion, chili powder, and taco seasoning while cooking to add some flavor to the meat. Or add all of it now. if desired.
Combine, meat, beans, corn, onions, salsa and water, and any remaining spices, then cook on low for 6-8 hours.
Microwave rice per package instructions and add to crockpot 10-15 minutes before serving.
Makes 8, 1 cup servings.
