Chicken Fricassee

Introduction

A rich tasting sauce...great comfort meal reduced fat A rich tasting sauce...great comfort meal reduced fat
Number of Servings: 1

Ingredients

    4 4 oz skinned boned chicken breasts halves
    1/2 t salt
    1/4 t pepper
    2 t light butter
    3/4 cup chopped green onions
    1/2 cup diced carrot
    1/2 cp diced ham ( low sodium)
    2 garlic cloves minced
    1 cup fat free loesssodium chicken broth
    1/2 cup chardonnay or other dry white wine...I used a cooking wine
    1/3 cup whipping cream....I used fat free half and half with a bit of cornstarch
    3 cups cooked orzo ...long grained or brown rice

Directions

Step 1
Sprinkle chicken with salt and pepper. Melt butter in a large nonstick skillet over med high heat
Add chicken and cook 3 min on each side or until browned
Remove chicken from pan
Step 2
Add onions, carrot, ham, and garlic to pan and saute 4 min or until lightly browned. Stir in broth and wine scraping to loosen browned bits. Return chicken to pan and bring to boil
Cover and reduce heat and simmer for 10 min or until chicken is done
remove chicken from pan with slotted spoon and keep warm
Add cream and cook uncoverd over med heat for 8 min
3/4 cup orzo or rice onto 4 plates. Top each with 1 chicken brreeast half and 1/3 cup of sauce and to with 1 T parsley for garnish
