Introduction

Ingredients

    Zucchini, 1 cup, sliced
    Eggplant, 1 cup (1" cubes)
    Garlic, 1 clove chopped
    *Peppers, sweet, red, fresh, 1 medium, sliced
    Onions, raw, 1 small, sliced
    Red Ripe Tomatoes, 1 cup, chopped or sliced or tin of tomato.
    salt and pepper to taste.
    Pinch of chilli flakes (optional)

Directions

You can cook this stew in 2 different ways -

Hob - Add all ingredients to a large saucepan. Bring to boil then simmer until veg is soft.
Add salt & pepper to taste.

Oven - Add all ingredients to a large casserole dish, cook with lid on until veg is soft. Add salt & pepper to taste.

For extra spice add a pinch of chilli flakes or a chopped chilli.
If tomato's are not very sweet add a teaspoon of sweetener to the pot.

Serve on it's own or with grilled meat or fish
