Ingredients

1 garlic clove, minced
1 peeled and chopped onion
1 lb. ground turkey, lean
2 cups frozen corn
2 cups cooked or canned pinto beans, drained
2 cups lowfat chicken broth
1/3 cup tomato paste
2 tsp. chili powder
1 tbsp. ground cumin
Directions
Lighly spray skillet with cooking spray and heat over med-high heat. Satue garlicv, onion, and green pepper until lightly golden, about 5 min. Add ground turkey and cook until the meat is no longer pink. Add the rest of the ingredients and bring to a boil. Reduce heat to low and simmer until veggies are tender, about 4 min.
I like to serve it over a baked potato, over a salad with baked chips (like a taco salad), or by itself.
Makes 12 servings.
