Introductionlow fat and delicious low fat and delicious
1 lb. tomatoes, diced, drained
1 large green pepper, seeded, cut into 1/3-in cubes
1/2 lg cucumber, cut into 1/3-in cubes
1/2 cup thinly sliced radishes
2 tbsp olive oil
8 oz reduced calorie feta cheese, broken into small cubes
2 green onions, chopped
1/2 cup plain non-fat Greek yogurt
1 tsp dried oregano
Add half each of the cheese and green onion.
Mix remaining cheese, green onions, and oil in processor - add yogurt and oregano.
Process just to blend (do not over mix or dressing will get thin).
Season dressing with salt and pepper.
Mix into salad.
