My Tuna Noodle Casserole

Introduction

Number of Servings: 12

Ingredients

    1 package no-yolk egg noodles
    1 tbsp olive oil
    .5 cup chopped green onion
    2 cups yellow onion
    1 cup mushrooms
    2 cans diced tomato, drained
    2 tsp dried basil
    1 tsp dried tarragon
    .5 tsp salt
    2 cups non-fat cottage cheese
    .5 cup lite mayonnaise
    1 can (12 oz) tuna (water packed) drained
    .5 tsp black pepper
    .5 cup grated Parmesan cheese

Directions

Preheat oven to 425 degrees. Cook noodles according to package directions and drain when done.
Meanwhile, in a large skillet heat oil over medium-high heat. Add onions and mushrooms and cook until tender. Stir in tomatoes, basil, tarragon, and salt. Cook thru. Remove from heat and cool slightly.
In large bowl combine cottage cheese and mayo. Stir in noodles, tuna, pepper and tomato mixture. Mix well. Spoon into good-sized casserole dish. Sprinkle Parmesan on top. Bake until top is golden brown, about 15-20 minutes.
