1/2 lb extra lean ground beef (93%lean) 1/2 cup chopped onion 1 clove garlic, minced 3 cups of water* 1 14.5oz can whole tomatoes, undrained, chopped 3/4 cup quick cook barley 1/2 cup sliced celery 1/2 cup sliced carrots 2 cups low sodium fat free beef broth 1/2 tsp dried basil 1 bay leaf 1 9 or 10 oz pkg frozen mixed vegetables
In a 4 qt saucepan or Dutch oven,brown meat. Add onion and garlic and cook till tender. Drain. Stir in remaining ingredients except frozen vegetables. Cover, bring ot a boil. Reduce heat and simmer 10 minutes. Stirring ocasionally. Add frozen vegetables, cook another 10 minutes or till vegetables are tender. Add extra water if soup becomes too thick.
*Up to 2 cups of extra water may be added.
