Kat's Cheesecake

Introduction

A wonderfully refreshing and low calorie treat - perfect for potlucks, parties or just to indulge yourself! A wonderfully refreshing and low calorie treat - perfect for potlucks, parties or just to indulge yourself!
Number of Servings: 48

Ingredients

    1 block Cream Cheese
    1 block Fat Free Cream Cheese
    2 Lg Eggs
    1/2 Cup Sugar
    2 Tsp Vanilla Extract
    48 Vanilla Wafers
    1 pint Raspberries
    1 pint Blueberries

Directions

Preheat oven to 350.

Blend cream cheeses, sugar, vanilla, and eggs together until smooth.

Press 1 vanilla wafer at the bottom of a nonstick mini-muffin pan (24 pieces). Scoop 1 tbsp filling on each wafer. Bake for 10-12 minutes or until filling is set.

Remove from oven and lightly press fresh fruit into cheesecake. Let cool and refrigerate for 1-2 hrs.
