Zucchini Boats

Number of Servings: 6

Ingredients

    3 large zucchini cut in half lengthwise
    1 lb of lean ground beef or ground turkey
    1 can of petite diced tomatoes
    1 cup of uncooked instant rice
    1 small chopped onion
    1 tbsp of worcestershire sauce
    1/2 tsp garlic powder (more or less to you taste)
    Parmesan Cheese or Low Fat Mozzarella Cheese

Directions

Cut the zucchini in half lengthwise. Scoop out the middle of the squash and make it look like a boat. Set this aside.

In a skillet brown meat of your choice with the chopped onion and garlic powder. Add the remaining ingredients including the squash you scooped out. Cook until it is heated through.

Place the zucchini boats in a baking dish and add the cooked ingredients. Top with mozzarella cheese or parmesan cheese, which ever you prefer. Bake in oven heated to 350 degrees for 20 or 30 minutes or until th squash is as tender as you like.
