Introduction

Ingredients

    1/2 pound canadian bacon
    1 medium onion, chopped
    1 stalk celery, sliced
    5 cups chicken broth
    2 cups water
    1 tsp chicken bouillon granules
    2 carrots, peeled and diced
    4 medium potatoes, peeled and cubed
    1 large sweet potato, peeled and cubed
    1/2 tsp garlic powder
    1/2 tsp oregano
    1/2 tsp parsley flakes
    1/4 tsp black pepper
    1/4 tsp red pepper
    2 cups nonfat milk
    1/4 cup flour

Directions

In Dutch oven, cook Canadian bacon, onions and celery untin bacon is cooked and vegetables are tender. Stir in chicken broth, water and bouillon. Add carrots, potatoes, sweet potatoes and seasonings. Bring to a boil. Reduce heat and simmer for about 12 minutes or until potatoes are soft. Combine flour and milk until smooth; gradually stir into soup. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Makes about 14 servings (1 1/2 - 2 cups per serving).
