Virginia's Muesli Fiber Bread/Muffins

Ingredients

    1 cup splenda
    3/4 cup rice milk (Trader Joe's unsweetened used here)
    1/3 cup applesauce, unsweetened
    3 large egg whites
    1/2 teaspoon orange extract (or vanilla or almond, changes flavor)
    Virginia’s muesli, 1 2/3 cups
    2 teaspoons baking powder
    1/2 teaspoon salt
    1 cups flour, whole wheat
    ½ cup Fiber one cereal, crushed

Directions

Preheat oven to 350 degrees. Grease 9 x 5 x 3-inch pan (or two small pans). Crush cereal in blender or food processor to equal 1-1/3 cups. Reserve 1/3 cup. Combine sugar, milk, eggs, oil, and almond extract in small bowl. Combine flour, cereal, baking powder, and salt in large bowl. Add sugar mixture to flour mixture. Press reserved cereal on top. Bake 50 to 60 minutes as loaf or 30-40 minutes as 12 muffins. Cool 10 minutes and turn out on wire rack. Freezes well.
