Introduction

I am working on my granola recipe. This one has quinoa and fiber one and egg. I'm trying to increase the protein and fiber content. The egg is to get it to glom together better. Ingredients

    1/2 c dry Quinoa, rinsed, soaked and drained
    1/2 c Fiber One Cereal
    2 c Rolled Oats
    1 1/2 tbsp Pumpkin Pie spice
    1/4 c sweetened flaked coconut
    1 c raisins
    -----------------------------------------------
    4 tbsp dry milk
    2/3 c honey
    1/4 c smooth peanut butter
    1/3 cup water
    2 tbsp cocoa powder
    -----------------------------------------------
    1 large fresh egg

Directions

1. Preheat oven to 400.
2. Combine dry ingredients (to raisins) in mixing bowl.
3. Heat peanut butter, water, honey, dry milk, cocoa powder and pumpkin pie spice in sauce pan over medium low heat until melted and combined. I used a small whisk. Let cool a little, then pour over the top of dry ingredients.
4. Combine dry and peanut butter mixture. Mix in egg well AFTER the above are well combined
5. Press into greased pan.
6. Bake 20-25 minutes until browned around the edges.
7. Remove from oven, let cool and slice into bars.
One serving = 49.7 grams.
