Black Bean Stuffed Peppers

Ingredients

Olive Oil - 1 tbsp
Peppers - 3 large
Brown Rice - 1.5 cup
Black Beans - 1can
Small Onion - 1 diced
Jalapeno Pepper - 1 diced
Garlic - two cloves, diced
Yellow Sweet Corn - 1 cup kernels
Cilantro - 2 tbsp
Cheddar Cheese, 4 oz
Directions
Heat 1 Tablespoon of olive oil in a large non-stick pan over medium-low heat. Sweat garlic, onions and jalapeno until onion is pearly, add corn to pan and heat through. Drain but do not rinse beans, add to pan. Heat through, then add bean mixture to 1.5 cups cooked rice. Toss rice and beans with 3 tablespoons of grated cheddar cheese, reserving 1 tablespoon to top peppers.
Carefully slice off cap of peppers and remove all seeds. Fill with mixture, then top with remaining cheese. Bake for 25 minutes at 350 degrees. Serve whole. Makes 3.
