Ground Beef Stroganoff

Introduction

My version of the classic. My version of the classic.
Number of Servings: 14

Ingredients

    2 lbs lean ground beef
    1 c. chopped raw onion
    2 c. mushrooms, sliced
    6 c. cooked wide egg noodles
    2.5 cans of cream of mushroom soup
    1/2 c. tomato paste
    2 tbsp olive oil
    1 c. beef stock, home made or canned, low sodium
    1 c. sour cream
    garlic, to taste
    salt and pepper, to taste

Directions

Cook ground beef with salt and pepper and garlic over medium heat until browned. Drain and set aside. In same pan, add olive oil and onions. Cook onions until soft, then add mushrooms. Cook until mushrooms cooked down, then add tomato paste and stir until mixed in. Reduce heat to low and add mushroom soup and beef broth, mixing well. When mixture is heated through, add cooked ground beef and egg noodles, heating again until all heated through. Makes 12-14 one cup servings. Add a dollup of sour cream when served.
