Asparagus Salad

Ingredients

    2 bundles asparagus
    1 pint cherry tomatoes, cut in half
    1/2 cup chopped vidalia onion
    1 jar roasted red pepper in water, chopped

    sauce:
    2 T balsamic vinegar
    2 T dijon mustard
    2 T olive oil
    2 t Italian dressing mix (from packet)

Directions

Mix sauce in a bowl

Cut asparagus into 1 inch pieces and cooked until tender-crisp then shocked in ice water. Drain and add remaining ingredients. Stir well

Even better the next day.
