Turkey Chili

Introduction

This is a low-fat chili with lots of nutrients and lots of taste! The salt is optional, but the dish really needs it. I tried to keep the sodium under 800 mg, which is pretty good for chili. The sugar and whiskey are also optional, but they add a lot when you take time to cook this chili down for a long period of time. This is a low-fat chili with lots of nutrients and lots of taste! Ingredients

    1 pound ground turkey (93% lean)
    1 can black beans, rinsed
    1 can pinto beans, rinsed
    2 cans kidney beans, rinsed
    3 cans crushed tomatoes
    1 cup chopped white onion
    1/2 cup purple onion
    1/2 cup seeded and chopped red bell pepper
    1/2 cup seeded chopped green bell pepper
    1 small Jalapeno pepper, seeded and chopped
    1/2 cup chopped zucchini
    1/4 cup chopped parsley
    1 carrot, grated
    3 cloves pressed garlic
    1 tbsp cumin
    1/2 tbsp paprika
    1/2 tbsp garlic powder
    1 1/2 tbsp chili powder
    2 tsp granulated sugar
    1/8 oz. whiskey
    1 cup water (or more, depending on consistency preference)

Directions

In a large pot, cook and drain the turkey, mixing in some of the onion. You may need to add a smidgen of olive oil (the nutrional information budgets 1 tsp) to the pan to cook the meat, but that is optional.

While turkey is cooking, chop and prepare all vegetables. Once turkey has been cooked and drained, all beans, tomatoes and all the vegetables. Add spices.

Cover and allow to cook down on med-low for at least an hour (more cooking time will yield a yummier chili.)

Serve with corn muffins or crackers.

Makes 12 1-cup servings.
