Introduction

low calorie chicken dish with sauce to serve over pasta . After cooking casserole. I spooned sauce over 1 cup of cooked pasta for each serving. With aside of steamed green beans it was great. This makes a great Sunday family meal.With 1 breast, cup of pasta and 1 cup steamed beans you have complete meal for uner 500 calories. low calorie chicken dish with sauce to serve over pasta . Ingredients

    8 chicken breast ( I used frozen in a bag, no skin and bones removed.)
    2 stalks celery chopped
    2 cups onion chopped
    2 cups mushroom chopped
    1 cup green bell pepper chopped
    1 cup red bell pepper chopped
    4 cloves garlic diced
    3 ounce grated parmesan cheese
    1 tbl. olive oil
    28oz can petite diced tomatoes
    26 oz. can Hunts garlic herb spaghetti sauce
    1 tsp. oregano
    1tsp. thyme
    salt and pepper to taste

Directions

Salt & pepper chicken breast after washing and drying meat. In large nonstick skillet heat until hot. Add 1/2 tbl. olive oil. Add 4 chicken breast to skillet lightly brown each side, remove to a large casserole pan sprayed with pam. and repeat with the other 4 breast. Remove to casserole. Add 1/2 tbl. olive oil to skillet saute onions, celery, mushrooms, peppers and garlic 5minutes. Add diced tomatoes and sauce ,oregano & thyme. Cook additional 5 minutes add parmesan . Spread over chicken breast cover casserole with tin foil. Bake 45 minutes @ 350 degrees.
Cook spaghetti per package direction , until al dente. Serve 1breast and 1 cup cooked pasta with sauce for each serving. Add 1 serving steamed green beans for a side.
